Grilled Sardines on Rye Toast
Consider this post my petition for a tinned fish revival.
This variation of sardines on toast is an ode to my mum, who has been making it on repeat for decades. Quick, easy, and ridiculously delicious - it's a lunchtime classic for a reason. Ingredients
1 slice german rye bread
1 tin sardines in olive oil
1/4 red onion, finely chopped
2 large handfuls rocket and spinach
1/2 lemon
salt and pepper
fresh herbs, to garnish

Instructions
Toast the rye bread, mash up the sardines in a bowl and spread evenly on the toast. Add the red onion, seasoning and a squeeze of lemon before placing under the grill for 5 minutes.
Heat some oil in a pan and saute the greens until wilted. Serve it all up together and garnish with the fresh herbs.
